With only 87 calories per cup, this light and fresh gazpacho makes for a fantastic lunch, dinner, or snack. Serve it garnished with a drizzle of balsamic vinegar, sprouts, diced tomatoes, crispy croutons, pita bread chips, or your favorite sidekick – a small sandwich or half a sandwich is perfect! Enjoy!

How to cook gazpacho

Serves 4

Ingredients

1 tablespoon extra virgin olive oil

1 sweet onion, chopped

1 garlic clove, minced

2 tablespoons thinly sliced jalapenos, or to taste

ј cup sun-dried tomatoes in oil, drained, about 3 pieces

1 ј pounds ripe tomatoes, diced (4 cups)

1 cup diced seedless cucumber

1 cup water or low-sodium fat-free vegetable stock

ј teaspoon salt

Freshly ground pepper or hot sauce, to taste

2 tablespoons chopped fresh cilantro, dill, or chervil
Instructions

In a medium saucepan, heat the olive oil over medium heat. Add the onions and cook, stirring occasionally, until they turn light golden brown, about 5 minutes.

Add the garlic, jalapenos, and sun-dried tomatoes and sautй for 1 minute. Add the remaining ingredients except the fresh herbs, and bring to the point just before boiling. Remove from the heat and let cool.

In a blender or food processor or using a hand-held immersion blender, puree the gazpacho to the desired consistency. Adjust the seasoning, and refrigerate until well chilled. Garnish with the fresh herbs and whatever else you like before serving.
